The transport of these olives is mostly done in off-road vehicles with small trailers, which have replaced cavalry due, as we have said before, to the uneven terrain.
The reception of the olives is done in two ways: the first enters the olives selected by the farmers, for this luxurious broth, and on the other those of inferior quality.
The milling of these olives is done daily, avoiding storage. Where the crushed mass passes and beats at room temperature.
Once the oil has been extracted, this luxurious product will rest in a totally independent and unitary decanters, to later be analyzed and transferred to larger tanks, for filtering and subsequent packaging in the same cooperative.
